dc.description.abstractThe Maillard reaction in a molasses storage tank at a Mauritian sugar factory during the 1994 crushing season is described in this study. It assesses the economic loss, reviews mechanisms of the Maillard reaction, and suggests preventive measures. The impact of froth fermentation, foaming, and molasses cooling is discussed.
